1 cup canned pumpkin puree

1 cup Greek yogurt (plain or vanilla)

1/2 cup honey or maple syrup

1 tsp vanilla extract

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp ground ginger

1/4 tsp ground cloves

1/4 tsp salt

1 1/2 cups old-fashioned oats

1/4 cup all-purpose flour (can substitute with almond flour for gluten-free)

1 tsp baking powder

1/2 tsp baking soda

Optional toppings: crushed graham crackers, whipped cream, caramel sauce

Instructions
 

Prep the Mixture: In a mixing bowl, combine the pumpkin puree, Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until smooth and well combined.

    Spice It Up: Add cinnamon, nutmeg, ginger, cloves, and salt to the mixture. Mix thoroughly to ensure that the spices are evenly distributed.

      Combine Dry Ingredients: In a separate bowl, combine oats, all-purpose flour, baking powder, and baking soda. Mix well.

        Mix Dry and Wet: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix. The batter should be thick but pourable.

          Preheat the Oven: Preheat your oven to 350°F (175°C).

            Prepare the Donut Pan: Lightly grease a donut pan with non-stick spray or oil.

              Fill the Donut Pan: Use a piping bag or a spoon to fill each donut cavity about 3/4 full with the batter.
