1 cup plain Greek yogurt

1/2 cup unsalted pistachios, shelled and roughly chopped

1/2 cup medjool dates, pitted and chopped

2 tablespoons honey or maple syrup (adjust to sweetness preference)

1 teaspoon vanilla extract

1/4 teaspoon sea salt

Dark chocolate chips, for drizzling (optional)

Fresh mint leaves, for garnish (optional)

Instructions
 

Mix the Base: In a medium-sized bowl, combine Greek yogurt, honey (or maple syrup), vanilla extract, and sea salt. Stir until the mixture is smooth and well blended.

    Incorporate the Add-ins: Fold in the chopped pistachios and dates into the yogurt mixture, ensuring even distribution throughout the yogurt.

      Form the Clusters: Line a baking sheet with parchment paper. Using a tablespoon or a cookie scoop, drop spoonfuls of the yogurt mixture onto the prepared baking sheet in a cluster shape. Aim for about 1-2 tablespoons per cluster, creating roughly 12-16 clusters.

        Drizzle with Chocolate (optional): If desired, melt dark chocolate in the microwave in 20-second intervals, stirring in between until smooth. Drizzle over each cluster for added flavor and decoration.

          Freeze: Place the baking sheet in the freezer and let the clusters freeze for at least 4 hours or until solid.
