2 cups plain Greek yogurt

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

1 cup unsalted pistachios, shelled and finely chopped

1/4 cup almond flour

1/4 cup shredded coconut (unsweetened)

1/4 teaspoon sea salt

1/2 teaspoon cinnamon (optional)

Dark chocolate chips (for drizzling, optional)

Instructions
 

Mix the Yogurt Base: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until the mixture is smooth and well combined.

    Prepare the Crunch Mixture: In a separate bowl, mix together the finely chopped pistachios, almond flour, shredded coconut, sea salt, and cinnamon (if using). Stir until evenly combined.

      Create the Coins: Line a baking sheet with parchment paper. Using a tablespoon, scoop the yogurt mixture and place small dollops onto the prepared baking sheet, leaving a little space in between each. Gently flatten each scoop to form a coin shape (about 2 inches in diameter).

        Add the Crunch Topping: Sprinkle a generous amount of the pistachio mixture on top of each yogurt coin, pressing slightly to ensure it adheres.

          Freeze: Place the baking sheet in the freezer for at least 4 hours or until the yogurt coins are completely frozen.

            Drizzle with Chocolate (Optional): If desired, melt a handful of dark chocolate chips in the microwave or using a double boiler. Once melted, use a fork or piping bag to drizzle over the top of the frozen yogurt coins after they have been removed from the freezer.
