For the crust:

1 ½ cups graham cracker crumbs

¼ cup granulated sugar

½ cup unsalted butter, melted

For the filling:

2 cups vanilla yogurt (Greek or regular)

1 cup ripe peaches, peeled and diced (fresh or frozen, thawed)

¼ cup honey or maple syrup (adjust sweetness to taste)

1 tsp vanilla extract

1 tsp lemon juice

For the topping:

½ cup diced peaches

¼ cup crushed graham crackers (for sprinkling)

Fresh mint leaves for garnish (optional)

Prepare the crust: In a medium bowl, combine the graham cracker crumbs and sugar. Stir in the melted butter until the mixture is well combined and resembles wet sand. Press the mixture firmly into the bottom of an 8x8 inch (or similar size) baking dish to form an even layer. Refrigerate while you prepare the filling.

    Make the filling: In a large mixing bowl, combine the vanilla yogurt, diced peaches, honey (or maple syrup), vanilla extract, and lemon juice. Gently fold until the ingredients are well mixed, making sure not to mash the peaches too much.

      Assemble the bars: Pour the yogurt filling over the prepared crust, spreading it evenly with a spatula. Tap the dish gently on the countertop to remove any air bubbles.

        Add the topping: Sprinkle the additional diced peaches and crushed graham crackers evenly over the top of the yogurt layer.
