1 cup almond flour

1/2 cup rolled oats

1/4 cup brown sugar, packed

1/4 cup coconut oil, melted

1 tsp vanilla extract

1/4 tsp salt

1/2 cup mini chocolate chips

For the Yogurt Base:

2 cups Greek yogurt (plain or vanilla)

1/4 cup honey or maple syrup (adjust to taste)

1 tsp vanilla extract

Optional: sprinkles for topping

Prepare the Cookie Dough:

    - In a medium bowl, combine almond flour, rolled oats, brown sugar, melted coconut oil, vanilla extract, and salt. Mix until a dough forms.

      - Fold in the mini chocolate chips until evenly distributed.

        Form Cookie Dough Bites:

          - Use a teaspoon to scoop out small portions of the cookie dough. Roll them into tiny balls (about 1 inch in diameter) and place them on a parchment-lined baking sheet. You should yield about 15-20 bites.

            - Place the baking sheet in the freezer for about 30 minutes, or until the bites are firm.

              Prepare the Yogurt Base:

                - While the cookie dough bites are freezing, in a large bowl whisk together the Greek yogurt, honey (or maple syrup), and vanilla extract until smooth and creamy.

                  Assemble the Muffin Bites:

                    - Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.

                      - Spoon a small amount of the yogurt mixture into each muffin cup, filling them about 1/3 full.

                        - Place one frozen cookie dough bite into the center of each filled cup and then top with additional yogurt mixture, filling almost to the top.

                          Bake:

                            - Bake the muffin bites in the preheated oven for 15-18 minutes, or until the edges are slightly set. The centers will remain a bit soft—this is okay!

                              - Remove from the oven and let cool for a few minutes in the muffin tin before transferring to a wire rack to cool completely.

                                Freeze and Serve:

                                  - Once cool, place the muffin bites in the freezer for at least 2 hours to firm up fully.

                                    - Serve directly from the freezer, and if desired, sprinkle with additional toppings like sprinkles or chopped nuts right before eating.
