For the crust:

1 cup graham cracker crumbs

1/4 cup unsweetened shredded coconut

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

For the filling:

2 cups plain Greek yogurt (or coconut yogurt for a dairy-free version)

1 cup fresh lemon juice (about 4-5 lemons)

Zest of 2 lemons

1/2 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1/4 teaspoon salt

For the topping:

1/4 cup unsweetened shredded coconut, toasted

Fresh lemon slices or zest for garnish (optional)

Instructions
 

Preheat & Prepare:

    Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal later.

      Make the Crust:

        In a large mixing bowl, combine the graham cracker crumbs, shredded coconut, and granulated sugar. Pour in the melted butter and stir until the mixture reaches a crumbly texture that holds together when pressed.

          Press the Crust:

            Firmly press the crust mixture into the bottom of the prepared pan. Make sure it’s evenly distributed. Bake in the preheated oven for 10-12 minutes, or until golden and set. Once done, remove from the oven and allow to cool completely.

              Prepare the Filling:

                In a medium bowl, combine the Greek yogurt, lemon juice, lemon zest, honey (or maple syrup), vanilla extract, and salt. Whisk everything together until smooth and creamy.

                  Fill the Bars:

                    Pour the yogurt lemon mixture over the cooled crust, spreading it out evenly. Gently tap the pan on the counter to release any air bubbles.

                      Freeze:

                        Cover the pan with plastic wrap or aluminum foil and place it in the freezer for at least 4-6 hours, or until the filling is fully set.

                          Toast the Coconut:

                            While the bars are freezing, toast the shredded coconut in a small dry pan over medium heat. Stir frequently until golden brown. Remove from heat and let it cool.

                              Cut & Serve:

                                Once the bars are frozen, use the parchment overhang to lift them out of the pan. Cut into squares or bars. Sprinkle the toasted coconut on top and garnish with lemon slices or extra zest if desired.
