For the Muffin Bites:

1 cup all-purpose flour

1/2 cup rolled oats

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/3 cup honey or maple syrup

1/2 cup vanilla yogurt (Greek or regular)

1/4 cup unsweetened applesauce

1 large egg

1 teaspoon vanilla extract

For the Cinnamon Swirl:

2 tablespoons brown sugar

1 teaspoon ground cinnamon

1 tablespoon melted coconut oil or butter

For Freezing:

1 cup of your favorite frozen yogurt

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a mini muffin tin with paper liners or grease it lightly with cooking spray.

    Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, rolled oats, baking powder, baking soda, cinnamon, and salt. Set aside.

      Combine Wet Ingredients: In a large mixing bowl, whisk together the honey (or maple syrup), vanilla yogurt, applesauce, egg, and vanilla extract until well blended.

        Combine Mixtures: Gradually fold the dry ingredients into the wet ingredients until just combined. Be careful not to over-mix; a few lumps are okay.

          Prepare Cinnamon Swirl: In a small bowl, mix together the brown sugar, ground cinnamon, and melted coconut oil or butter until you have a crumbly mixture.

            Fill Muffin Tins: Scoop a tablespoon of muffin batter into each mini muffin cup, then sprinkle a small pinch of the cinnamon swirl mixture on top. Follow with another tablespoon of muffin batter, then add another sprinkle of the cinnamon swirl mixture on top. Use a toothpick to gently swirl the mixture together.

              Bake Muffin Bites: Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center comes out clean.

                Cool Down: Remove the muffin bites from the oven and allow them to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

                    Freeze the Muffin Bites: Place the muffin bites back into the freezer for about 1-2 hours until the yogurt is completely set.
