Frozen Yogurt Chocolate Toffee Bars

2 cups plain Greek yogurt (full-fat for creaminess)

1/2 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

Pinch of salt

For the Toffee Layer:

1 cup unsalted butter

1 cup brown sugar, packed

1 tablespoon water

1 teaspoon vanilla extract

1 cup chopped toffee bits (like Heath bar or Skor)

For the Chocolate Topping:

1 cup semi-sweet chocolate chips

2 tablespoons coconut oil (or butter)

Instructions
 

Prepare the Yogurt Layer: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and pinch of salt. Whisk until smooth and well incorporated.

    Spread the Yogurt Mixture: Line a 9x9 inch baking dish with parchment paper, leaving a bit of overhang for easy removal. Pour the yogurt mixture into the dish and spread evenly. Place in the freezer and let it set for about 1-2 hours until firm.

      Make the Toffee Layer: In a medium saucepan over medium heat, combine the unsalted butter, brown sugar, and water. Stir constantly until the mixture comes to a boil. Reduce heat slightly and continue to boil for 4-5 minutes until it thickens, stirring constantly to prevent burning. Remove from heat and stir in vanilla extract and toffee bits.

        Add the Toffee Layer: Once the yogurt layer is firm, remove it from the freezer. Carefully pour the toffee mixture over the frozen yogurt layer, spreading it out evenly. Return the dish to the freezer for another 30 minutes to allow the toffee to harden.

          Prepare the Chocolate Topping: In a small microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second increments, stirring in between, until smooth and melted. Allow it to cool slightly.

            Top with Chocolate: Once the toffee layer is firm, pour the melted chocolate over the toffee layer, spreading evenly. Return the dish to the freezer for about 20-30 minutes, until the chocolate is set.
