Ingredients

2 cups Greek yogurt (plain or flavored)

1/3 cup honey or maple syrup

1 tsp vanilla extract

1 ½ cups granola (your choice of flavor)

1 cup mixed nuts (almonds, walnuts, pecans), roughly chopped

1 cup dried fruits (cranberries, apricots, or raisins)

1 cup mini dark chocolate chips or yogurt-covered raisins

Cooking spray or parchment paper

Instructions

Prepare the Yogurt Base: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Mix until smooth and creamy. Adjust sweetness to taste.

Line the Baking Tray: Prepare a baking tray (or cookie sheet) by lining it with parchment paper or lightly greasing it with cooking spray to prevent sticking.

Create the Coins: Using a tablespoon, drop dollops of the yogurt mixture onto the prepared tray, forming coin-shaped rounds about an inch in diameter. Leave enough space between each dollop as they may slightly spread while freezing.

Top with Trail Mix: In a separate bowl, combine the granola, mixed nuts, dried fruits, and chocolate chips or yogurt-covered raisins. Sprinkle a generous amount of this trail mix over each yogurt coin, gently pressing down to ensure it adheres to the yogurt.

Freeze: Place the tray in the freezer and allow the yogurt coins to freeze for at least 4 hours or until completely solid.

Serve: Once frozen, remove the yogurt coins from the tray by peeling them off the parchment paper. Enjoy immediately or store them in an airtight container in the freezer for up to 2 weeks.

Optional Chocolate Drizzle: For an extra touch, melt some dark chocolate and drizzle it over the frozen coins after they’ve been removed from the tray for added decadence.

Prep Time: 15 min | Total Time: 4 hours 15 min | Servings: Makes about 24 coins
