2 cups plain Greek yogurt

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

1 cup finely grated carrots (about 2 medium carrots)

1/2 cup crushed pineapple, drained

1/2 cup chopped walnuts or pecans

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup rolled oats

1/4 cup raisins (optional)

1/4 cup cream cheese, softened (for swirling)

Instructions
 

Prepare the Yogurt Mixture: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Whisk together until smooth and well combined.

    Add Flavorings: Stir in the grated carrots, crushed pineapple, walnuts or pecans, cinnamon, nutmeg, and salt. Mix until all the ingredients are evenly distributed.

      Incorporate Oats and Raisins: Gently fold the rolled oats and raisins (if using) into the yogurt mixture. This will add additional texture and flavor to the frozen yogurt.

        Prepare the Cream Cheese Swirl: In a small bowl, beat the softened cream cheese until smooth. You may add a teaspoon of honey to sweeten it slightly. Set aside for swirling later.

          Layer the Mixture: In a freezer-safe container, pour half of the yogurt-carrot cake mixture. Add dollops of the cream cheese mixture on top, then use a knife or a skewer to create swirls. Pour the remaining yogurt mixture over the top and create more swirls with the cream cheese.

            Freeze: Cover the container with a lid or plastic wrap. Place it in the freezer for at least 4 hours, or until solid.
