Frozen Yogurt Berry Cheesecake Bites

Ingredients
  

1 cup cream cheese, softened

1 cup Greek yogurt (plain or vanilla)

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup mixed berries (strawberries, blueberries, raspberries, chopped)

1/2 cup graham cracker crumbs

2 tablespoons melted butter

Optional: Fresh mint leaves for garnish

Prepare the Crust: In a small bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are well-coated and resemble wet sand.

    Add the Base: Line a mini muffin tin with paper liners or lightly grease it. Press about a teaspoon of the graham cracker mixture into the bottom of each muffin cup to form a solid crust layer.

      Make the Filling: In a large mixing bowl, combine the softened cream cheese, Greek yogurt, powdered sugar, and vanilla extract. Use an electric mixer to blend until smooth and creamy, ensuring there are no lumps.

        Add the Berries: Gently fold in the mixed berries into the cream cheese mixture. This will add delightful bursts of flavor to each bite.

          Assemble the Bites: Spoon or pipe the berry cheesecake filling on top of the graham cracker crust in each muffin cup, filling them almost to the top.

            Freeze: Place the muffin tin in the freezer for at least 3 hours, or until the cheesecake bites are completely firm.

              Serve: Once frozen, remove the cheesecake bites from the muffin tin. Peel off the liners if using and garnish with fresh mint leaves if desired. Enjoy them straight from the freezer, as they are wonderfully refreshing!
