Ingredients

2 cups Greek yogurt (plain or flavored)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract (optional)

1 cup mixed berries (strawberries, blueberries, raspberries, blackberries)

¼ cup chopped nuts (almonds, walnuts, or pecans)

2 tablespoons shredded coconut (unsweetened, optional)

A pinch of sea salt

Instructions

Prepare the Yogurt Mixture:

In a medium bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of sea salt. Mix well until fully combined and smooth.

      Line the Baking Sheet:

Line a baking sheet (about 9x13 inches) with parchment paper, ensuring that the paper hangs over the edges for easy removal later.

          Spread the Yogurt:

Pour the yogurt mixture onto the lined baking sheet and spread it evenly with a spatula, about ½ inch thick.

              Add Toppings:

Evenly sprinkle the mixed berries, chopped nuts, and shredded coconut over the top of the yogurt layer. Gently press the toppings into the yogurt to ensure they stick well.

                  Freeze:

Place the baking sheet in the freezer for at least 3-4 hours, or until the yogurt is completely frozen.

                      Cut and Serve:

Once frozen, remove the yogurt bark from the freezer. Lift the parchment paper to remove it from the baking sheet and place it on a cutting board. Using a sharp knife, cut the bark into pieces or break it apart with your hands.

                          Storage:

Store any leftovers in an airtight container in the freezer for up to two weeks. Enjoy as a quick snack or light dessert!
