For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

⅓ cup granulated sugar

For the Strawberry Layer:

2 cups fresh strawberries, hulled and sliced

¼ cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

For the Cream Layer:

2 cups heavy whipping cream

½ cup powdered sugar

1 teaspoon vanilla extract

For Garnish:

Fresh strawberries, sliced

Whipped cream (optional)

Instructions
 

Prepare the Crust:

    - In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar until well blended.

      - Press the mixture firmly into the bottom of a lined 9x9 inch (or similar size) baking pan. Use the back of a measuring cup to pack it tightly.

        - Refrigerate the crust while you prepare the strawberry layer.

          Make the Strawberry Layer:

            - In a bowl, combine the sliced strawberries, granulated sugar, lemon juice, and vanilla extract. Toss gently to coat.

              - Let it sit for about 10-15 minutes until the strawberries release their juices, creating a syrupy mixture.

                Make the Cream Layer:

                  - In a large mixing bowl, whip the heavy cream using an electric mixer on medium speed until soft peaks start to form.

                    - Gradually add the powdered sugar and vanilla extract, and continue to whip until stiff peaks form.

                      Assemble the Bars:

                        - Spread half of the whipped cream mixture evenly over the chilled crust.

                          - Spoon the strawberry mixture over the cream layer, spreading it out evenly.

                            - Top with the remaining whipped cream, smoothing it out with a spatula.

                              Freeze the Bars:

                                - Cover the pan with plastic wrap and freeze for at least 4 hours, or until completely solid.

                                  Serve:

                                    - Once frozen, remove the bars from the pan using the parchment paper overhang. Cut into squares or rectangles, as desired.

                                      - Serve with additional slices of fresh strawberries and a dollop of whipped cream on top if desired.
