Ingredients
  

1 cup fresh strawberries, hulled and halved

1 tablespoon honey (or maple syrup for a vegan option)

1 teaspoon lemon juice

1 cup cream cheese, softened

1/4 cup Greek yogurt (or coconut yogurt for a vegan option)

1/4 cup powdered sugar

1 teaspoon vanilla extract

1 cup graham cracker crumbs (or gluten-free crumbs)

1/4 cup unsalted butter, melted (or coconut oil for a vegan option)

Pinch of salt

Instructions
 

Prepare the Strawberry Puree:

    In a blender, combine the fresh strawberries, honey, and lemon juice. Blend until smooth. Pour the mixture through a fine mesh strainer to remove seeds, if desired. Set aside.

      Make the Cheesecake Filling:

        In a mixing bowl, beat the softened cream cheese until smooth and creamy using an electric mixer. Add in the Greek yogurt, powdered sugar, and vanilla extract. Mix until well combined and fluffy.

          Create the Crust:

            In another bowl, mix graham cracker crumbs, melted butter, and a pinch of salt. Stir until the crumbs are evenly coated and resemble wet sand.

              Assemble the Coin Bites:

                Line a mini muffin tin with paper liners. Press a spoonful of the graham cracker mixture into the bottom of each liner, creating a firm base.

                  Fill with Cheesecake Mixture:

                    Spoon the cheesecake filling on top of the crust layer in each mini muffin cup, filling them about 3/4 of the way full.

                      Add Strawberry Puree:

                          Freeze:
