2 cups fresh or frozen strawberries, hulled and roughly chopped

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1 cup Greek yogurt (plain or vanilla)

1/2 teaspoon vanilla extract

1 tablespoon fresh lemon juice

1/4 cup unsweetened coconut flakes (optional)

A pinch of salt

Prepare the Strawberries: If using fresh strawberries, wash and hull the fruit, then chop them into smaller pieces. If using frozen, ensure they are slightly thawed for easier blending.

    Blend the Ingredients: In a blender or food processor, combine the strawberries, honey or maple syrup, Greek yogurt, vanilla extract, lemon juice, and salt. Blend until smooth and creamy, ensuring there are no large strawberry chunks left.

      Add Coconut: If you’re adding coconut flakes, fold them into the blended mixture gently to maintain some texture.

        Pour into Molds: Carefully pour the mixture into silicone molds or a parchment-lined baking dish. Use a spatula to smooth the top for an even finish.
