Ingredients

2 cups Greek yogurt (plain or vanilla)

1 cup strawberries, hulled and chopped

2 ripe bananas, sliced

2 tablespoons honey or maple syrup (optional for sweetness)

1/4 cup granola (for crunch)

1/4 cup mini dark chocolate chips (optional, for garnish)

Fresh mint leaves (for garnish, optional)

Instructions

Prep the baking dish: Line a baking sheet (approximately 9x13 inches) with parchment paper, allowing some overhang for easy removal.

Mix the yogurt: In a mixing bowl, combine the Greek yogurt with the honey or maple syrup, stirring until smooth and well mixed. Taste and adjust sweetness, if desired.

Add fruits: Gently fold in the chopped strawberries and banana slices into the yogurt mixture. Make sure the fruits are evenly distributed.

Spread the mixture: Pour the yogurt and fruit mixture onto the prepared baking sheet. Use a spatula to spread it evenly across the surface, about 1/2 inch thick.

Top with granola: Sprinkle the granola over the yogurt layer. Press it lightly into the yogurt to help it stick once frozen.

Add chocolate chips (optional): If you like a touch of chocolate, scatter the mini dark chocolate chips evenly on top.

Freeze: Place the baking sheet in the freezer for about 4-6 hours, or until completely frozen.

Cut and serve: Once frozen, remove the baking sheet from the freezer. Use the overhanging parchment to lift the bark onto a cutting board. Cut into pieces with a sharp knife or break into bite-sized chunks.

Garnish (optional): Top with fresh mint leaves before serving for a refreshing touch.

Enjoy! Serve immediately, or store the bark in an airtight container in the freezer for up to 2 weeks.
