Ingredients

1 cup fresh orange juice (about 4-5 oranges)

1/2 cup full-fat coconut milk

1/2 cup Greek yogurt (or dairy-free alternative)

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon pure vanilla extract

1 tablespoon orange zest

A pinch of sea salt

Instructions

Juice and Zest the Oranges: Start by juicing the oranges until you have about 1 cup of fresh orange juice, then zest one of the oranges to gather about a tablespoon of zest.

Mix Ingredients: In a medium mixing bowl, combine the fresh orange juice, coconut milk, Greek yogurt, honey or maple syrup, vanilla extract, orange zest, and a pinch of sea salt. Mix thoroughly until everything is well combined and smooth.

Taste Test: Give the mixture a quick taste and adjust sweetness if needed, adding more honey or maple syrup based on your preference.

Pour into Cups: Pour the mixture evenly into small cups or popsicle molds, leaving a little space at the top as the mixture will expand when frozen.

Insert Sticks (if using molds): If you’re using popsicle molds, insert sticks into the center of each cup. If you're using regular cups, you can freeze without sticks or cover with foil and insert sticks once partially frozen.

Freeze: Place the filled cups or molds in the freezer for at least 4-6 hours or until completely solid.

Serve: Once frozen, remove the cups from the freezer and let them sit at room temperature for a couple of minutes to soften slightly. Run warm water over the outside of the cups for easier removal if using molds.

Enjoy: Serve the Frozen Orange Creamsicle Cups as a refreshing treat on a hot day or as a delightful dessert!
