1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

1 can (14 oz) sweetened condensed milk

1 cup freshly squeezed lemon juice (about 4-5 lemons)

Zest of 2 lemons

1 cup cool whip, thawed

Lemon slices and fresh mint for garnish (optional)

Prepare the crust: Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined and crumbly. Press the mixture into the bottom of a parchment-lined 8x8 inch baking dish, ensuring it is compact and even. Bake for 8-10 minutes until lightly golden. Remove from the oven and let it cool completely.

    Make the filling: In a large mixing bowl, whisk together the sweetened condensed milk, lemon juice, and lemon zest until smooth and well combined.

      Fold in the cool whip: Gently fold the thawed cool whip into the lemon mixture until no streaks remain. Be careful not to deflate the mixture.
