2 ripe bananas, mashed

1 cup coconut yogurt (dairy or non-dairy)

1 cup coconut milk (canned for creaminess)

2 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1/4 cup shredded coconut (unsweetened or sweetened, based on preference)

A pinch of salt

Optional: Fresh fruit pieces (pineapple, berries) for added texture

Instructions
 

Prepare the Ingredients: In a mixing bowl, mash the ripe bananas using a fork or potato masher until smooth.

    Mix the Base: Add the coconut yogurt, coconut milk, honey or maple syrup, vanilla extract, and a pinch of salt to the mashed bananas. Stir until well combined and smooth.

      Incorporate Coconut: Gently fold in the shredded coconut into the mixture, ensuring it's evenly distributed. If using fresh fruit pieces, add them at this stage as well.

        Fill the Molds: Pour the coconut banana mixture into popsicle molds, leaving a little space at the top for expansion. If you don't have molds, you can use small paper cups with wooden sticks.

          Insert Sticks: If using popsicle molds, place the sticks in the center. If using paper cups, insert the sticks once the mixture is partially frozen (about 1-2 hours into freezing).

            Freeze: Place the molds in the freezer and freeze for at least 6 hours, or until completely solid.

              Unmold and Serve: To remove the pops, run warm water over the outside of the molds or cups for a few seconds until they loosen. Gently pull the pops out.

                Enjoy: Serve immediately or store in a freezer-safe bag or container for up to 2 weeks. Perfect for a refreshing summertime treat!
