1 cup coconut cream (chilled)

1 teaspoon vanilla extract

½ teaspoon cornstarch (optional, for thickening)

½ teaspoon sea salt

1 cup unsweetened shredded coconut (for topping)

Prepare the Blueberry Mixture: In a medium bowl, mash the thawed blueberries with a fork until the mixture is slightly chunky. You can set aside a few whole blueberries for garnish if desired.

    Mix the Cream Base: In a separate large bowl, combine the chilled coconut cream, Greek yogurt, honey (or maple syrup), lemon juice, vanilla extract, cornstarch (if using), and sea salt. Whisk together until the mixture is smooth and creamy.
