2 large ripe bananas, peeled and sliced into 1-inch rounds

1 cup creamy peanut butter (or almond butter for a twist)

1 cup dark chocolate chips (or milk chocolate for a sweeter option)

1 tablespoon coconut oil

1/2 cup chopped roasted peanuts (unsalted)

Sea salt for sprinkling (optional)

Prep the Bananas: Start by slicing the bananas into 1-inch thick rounds. Arrange them in a single layer on a parchment-lined baking sheet.

    Add Peanut Butter: Using a small spoon or a piping bag, add about 1 teaspoon of peanut butter on top of half of the banana slices. Sandwich the remaining banana slices on top to create little banana sandwiches.

      Freeze: Place the baking sheet in the freezer and allow the banana sandwiches to freeze for at least 30 minutes, or until solid.

        Prepare Chocolate Coating: While the bananas are freezing, prepare the chocolate coating. In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the mixture is smooth and fully melted.

          Coat the Banana Bites: Remove the banana sandwiches from the freezer. Dip each sandwich in the melted chocolate, ensuring they are fully coated. Allow any excess chocolate to drip off.
