2 ripe bananas

1/2 cup creamy peanut butter

1/4 cup chia seeds

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

A pinch of sea salt

1/2 cup chopped dark chocolate (optional, for dipping)

1/4 cup crushed peanuts (for garnish)

Instructions
 

Prepare the Bananas: Peel the bananas and slice them into 1/2-inch thick rounds. Set aside.

    Make the Peanut Mixture: In a medium-sized bowl, combine the creamy peanut butter, chia seeds, honey (or maple syrup), vanilla extract, and sea salt. Mix thoroughly until well blended.

      Assemble the Clusters: Line a baking sheet with parchment paper. Take a banana slice, and using a small spoon, dollop a generous amount of the peanut mixture onto each slice. Repeat until all banana slices are topped.

        Freeze the Clusters: Place the baking sheet in the freezer and allow the clusters to freeze for about 2 hours, or until solid.

          Optional Chocolate Coating: If using dark chocolate, melt it in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Dip each frozen banana chia peanut cluster halfway into the melted chocolate and return it to the parchment-lined baking sheet.
