2 large apples (such as Granny Smith or Honeycrisp)

2 cups plain Greek yogurt

2 tablespoons honey or maple syrup

1 teaspoon ground cinnamon

½ teaspoon vanilla extract

¼ cup granola (optional, for topping)

¼ cup finely chopped walnuts or pecans (optional, for topping)

Instructions
 

Prepare the Apples: Wash the apples and core them. Slice them into rounds about 1/2 inch thick. You should get about 4 to 5 rounds per apple.

    Make the Yogurt Mixture: In a medium bowl, combine the Greek yogurt, honey (or maple syrup), ground cinnamon, and vanilla extract. Stir until well blended.

      Coat the Apple Rings: Lay out the apple rings on a baking sheet lined with parchment paper. Using a spatula or a spoon, generously spread the yogurt mixture onto each apple slice, making sure to cover them completely.
