12 ounces spaghetti or your preferred pasta

2 ripe avocados, diced

4 cups cherry tomatoes, halved

3 cloves garlic, minced

1/4 cup fresh basil leaves, chopped

1/4 cup extra virgin olive oil

1 tablespoon balsamic vinegar

Salt and pepper to taste

Freshly grated Parmesan cheese (optional)

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Prepare the Sauce: While the pasta is cooking, in a large serving bowl, combine the halved cherry tomatoes, diced avocados, minced garlic, and chopped basil.
