Fresh Summer Tomato and Corn Salad

4 cups fresh ripe tomatoes, diced (heirloom varieties recommended for color and flavor)

2 cups sweet corn kernels (fresh off the cob or frozen if fresh isn't available)

1 cup red bell pepper, diced

1/2 cup red onion, finely chopped

1/4 cup fresh basil leaves, chopped

1/2 teaspoon salt (to taste)

1/4 teaspoon freshly cracked black pepper (to taste)

3 tablespoons extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon honey (optional, to balance acidity)

1 avocado, diced (optional for creaminess and richness)

Prepare the Corn: If using fresh corn, bring a pot of water to a boil and blanch the corn cobs for about 2-3 minutes. Remove from water, let cool, and then cut the kernels off the cob. If using frozen corn, simply thaw it and set aside.

    Combine Vegetables: In a large mixing bowl, combine the diced tomatoes, sweet corn, red bell pepper, and red onion. Toss gently to mix.

      Add Seasonings: Sprinkle the chopped basil over the vegetable mixture. Season with salt and black pepper. If you like a hint of sweetness, drizzle in the honey.
