2 cups cooked chicken breast, shredded

1 large ripe mango, peeled, pitted, and diced

1 cup fresh coconut meat, shredded or diced (or 1 cup unsweetened shredded coconut)

1 cup mixed greens (such as arugula, spinach, and kale)

1/2 red bell pepper, thinly sliced

1/4 cup red onion, finely chopped

1/4 cup cilantro, chopped

1/4 cup toasted cashews, roughly chopped

Juice of 1 lime

2 tablespoons coconut milk

1 tablespoon honey or maple syrup (adjust to taste)

Salt and pepper, to taste

Optional: Crushed red pepper flakes for a hint of spice

Prepare the Chicken: If you haven’t cooked the chicken yet, poach or grill it, then let it cool. Once cooled, shred the chicken into bite-sized pieces.

    Make the Dressing: In a small bowl, whisk together the lime juice, coconut milk, honey (or maple syrup), and a pinch of salt and pepper. Adjust sweetness or acidity to taste and set aside.

      Combine the Ingredients: In a large salad bowl, combine the shredded chicken, diced mango, fresh coconut meat, mixed greens, red bell pepper, red onion, and cilantro.
