Ingredients

2 cups cooked chicken breast, shredded or chopped

1 ripe mango, peeled and diced

1 cup shredded coconut (unsweetened)

1 red bell pepper, diced

1/4 cup red onion, finely chopped

1/2 cup fresh cilantro, chopped

1 avocado, diced

1/4 cup lime juice (freshly squeezed)

2 tablespoons honey

1 teaspoon ground cumin

Salt and pepper to taste

4 cups mixed salad greens (such as arugula, spinach, or mixed leaf blend)

Optional: 1/2 cup chopped cashews for crunch

Instructions

Prepare the Chicken: If you haven't already, cook your chicken breast until it’s fully cooked (grilling or poaching works great). Allow it to cool, then shred or chop it into bite-sized pieces.

Make the Dressing: In a small bowl, whisk together the lime juice, honey, ground cumin, salt, and pepper until well combined. This dressing will add a sweet and tangy flavor to the salad.

Combine Ingredients: In a large mixing bowl, combine the shredded chicken, diced mango, shredded coconut, red bell pepper, red onion, and fresh cilantro. If using, fold in the diced avocado and chopped cashews gently to avoid mashing the avocado.

Dress the Salad: Pour the dressing over the mango and chicken mixture. Toss gently until everything is evenly coated. Be careful not to break apart the avocado too much.

Serve: On a large serving platter or individual plates, create a base of mixed salad greens. Top with the mango coconut chicken mixture, ensuring that each serving is generously garnished.

Enjoy: Serve immediately for the freshest taste, or chill for 30 minutes for flavors to meld before serving.
