Fresh Caprese Zoodle Salad

3 medium zucchinis (for zoodles)

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved or quartered

1/4 cup fresh basil leaves, torn

2 tablespoons extra virgin olive oil

1 tablespoon balsamic glaze

1 teaspoon garlic powder

Salt and pepper to taste

Prepare the Zoodles:

    - Using a spiralizer, create zoodles from the zucchinis. If you don't have a spiralizer, you can also use a julienne peeler or a vegetable peeler to create ribbon-like strips. Set aside in a large mixing bowl.

      Combine Salad Ingredients:

        - To the bowl of zoodles, add the halved cherry tomatoes, fresh mozzarella, and torn basil leaves.

          Dress the Salad:

            - In a small bowl, whisk together the extra virgin olive oil, balsamic glaze, garlic powder, salt, and pepper. Taste and adjust seasoning if needed.

              Toss Everything Together:

                - Pour the dressing over the zoodle mixture and gently toss until everything is well coated. Be careful not to crush the mozzarella.
