12 oz cheese tortellini (fresh or frozen)

2 cups fresh basil leaves

1/2 cup Parmesan cheese, grated

1/2 cup extra virgin olive oil

1/3 cup pine nuts (lightly toasted)

2 cloves garlic, minced

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1/2 cucumber, diced

1/4 cup balsamic glaze (optional, for drizzling)

Fresh basil leaves for garnish

Instructions
 

Cook Tortellini: In a large pot, bring salted water to a boil. Add the tortellini and cook according to package instructions. Once done, drain and rinse under cold water to stop the cooking process. Set aside.

    Make Pesto: In a food processor, combine fresh basil leaves, toasted pine nuts, garlic, and grated Parmesan cheese. Pulse until finely chopped. With the processor running, gradually pour in the olive oil until smooth. Season with salt and pepper to taste.
