Ingredients

4 tablespoons all-purpose flour

3 tablespoons granulated sugar

1/4 teaspoon baking powder

1/8 teaspoon baking soda

1/4 teaspoon pumpkin pie spice

1/4 teaspoon ground cinnamon

A pinch of salt

3 tablespoons canned pumpkin puree

3 tablespoons milk (or milk alternative)

2 tablespoons vegetable oil

1/4 teaspoon vanilla extract

Optional toppings: whipped cream, chocolate chips, or chopped nuts

Instructions

In a microwave-safe mug (around 12 oz size), combine the flour, sugar, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt. Whisk together until well-blended.

In a separate small bowl, mix the canned pumpkin puree, milk, vegetable oil, and vanilla extract until smooth.

Pour the wet ingredients into the mug with the dry ingredients. Stir using a fork or small whisk until the mixture is well-combined and there are no lumps present.

If desired, fold in some chocolate chips or chopped nuts for added texture.

Microwave the mug cake on high for 1 minute and 30 seconds. If it’s not fully cooked, continue microwaving in 10-15 second intervals until the cake is fluffy and cooked through.

Allow to cool for a minute or two before adding your favorite toppings like whipped cream, extra pumpkin pie spice, or a drizzle of chocolate. Enjoy directly from the mug!
