Ingredients

4 slices of sourdough or multigrain bread

1 cup fig jam (store-bought or homemade)

4 oz cream cheese, softened

4 oz goat cheese, crumbled

1 tablespoon fresh rosemary, chopped (or thyme for a different flavor)

2 tablespoons butter, at room temperature

1 teaspoon honey (optional, for drizzling)

A pinch of salt and pepper

Instructions

Prepare the Cheese Mixture: In a medium bowl, combine the softened cream cheese and crumbled goat cheese. Mix well until smooth. Add the chopped rosemary, a pinch of salt, and pepper to taste. Mix until everything is thoroughly incorporated.

Spread the Fig Jam: On two of the slices of bread, generously spread a layer of fig jam.

Assemble the Sandwich: On the other two slices, spread a thick layer of the cheese mixture. Carefully place the jammed slices on top of the cheese-covered slices to form two sandwiches.

Butter the Bread: Spread the room-temperature butter evenly on the outside of each sandwich to ensure a golden, crispy crust.

Grill the Sandwiches: Heat a skillet or griddle over medium heat. Once hot, place the sandwiches in the skillet. Grill for 3-4 minutes on each side, or until the bread is golden brown and the cheese has started to melt. If desired, you can cover the skillet with a lid to help the cheese melt more evenly.

Optional Drizzle: Once cooked, remove the sandwiches from the skillet. If you like a touch of sweetness, drizzle a small amount of honey on top before serving.

Slice and Serve: Cut each sandwich in half, serve warm, and enjoy the delightful blend of sweet and savory flavors!
