1 pound fresh green beans, trimmed

2 tablespoons vegetable oil

3 garlic cloves, minced

1-inch piece ginger, peeled and minced

2-3 tablespoons Szechuan peppercorns

2 tablespoons chili paste (adjust to taste)

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon sugar

1/4 cup water

2 green onions, chopped

Sesame seeds for garnish

Blanch the Green Beans: Bring a large pot of salted water to a boil. Add the green beans and blanched for 2-3 minutes until bright green and tender-crisp. Drain and immediately plunge them into ice water to stop the cooking process. Drain again and set aside.

    Prepare the Szechuan Sauce: In a small bowl, mix together the soy sauce, rice vinegar, sesame oil, and sugar. Stir until the sugar is dissolved. Set aside.

      Toast the Peppercorns: In a large wok or skillet over medium heat, add the Szechuan peppercorns and toast them for 1-2 minutes until fragrant. Be careful not to burn them. Remove from heat and crush lightly with a mortar and pestle or the bottom of a pan to release their flavor.

        Stir-Fry Aromatics: In the same wok or skillet, add the vegetable oil and heat over high heat. Once hot, add the minced garlic, ginger, and toasted Szechuan peppercorns. Stir-fry for 30 seconds until fragrant.
