Ingredients

2 medium zucchinis, sliced into 1/4-inch rounds

1 cup breadcrumbs (panko or regular)

1/2 cup grated parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1/2 teaspoon paprika

Salt and pepper to taste

2 large eggs, beaten

Cooking spray or olive oil for drizzling

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

Prepare the Bread Crumb Mixture: In a large bowl, combine the breadcrumbs, grated parmesan, garlic powder, Italian seasoning, paprika, salt, and pepper. Mix well until all ingredients are evenly distributed.

Prepare the Zucchini: Pat the zucchini slices dry with paper towels to remove excess moisture. This helps in getting them crispy during baking.

Coat the Zucchini: Dip each zucchini slice into the beaten eggs, allowing excess to drip off. Then, coat the slice in the breadcrumb mixture, pressing gently to ensure a good layer adheres. Repeat until all zucchini slices are coated.

Bake the Zucchini Bites: Arrange the coated zucchini slices in a single layer on the prepared baking sheet. Lightly spray the tops with cooking spray or drizzle with olive oil for added crispiness.

Cooking Time: Bake in the preheated oven for about 20-25 minutes, or until golden brown and crispy. Flip the slices halfway through for even browning.

Serve: Remove from the oven and let them cool for a few minutes before serving. Pair with marinara sauce or ranch dressing for dipping!
