1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

2 cups enchilada sauce (store-bought or homemade)

8 small corn tortillas

1 tsp ground cumin

1 tsp chili powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sour cream (optional, for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Beef: In a large skillet over medium heat, add the ground beef and cook until browned. Add the chopped onion and minced garlic, cooking until the onion is translucent. Drain any excess fat.

      Add Ingredients: Stir in the black beans, diced tomatoes (with juices), ground cumin, chili powder, and season with salt and pepper. Let cook for another 3-5 minutes until heated through.

        Prepare Tortillas: Warm the corn tortillas in a dry skillet for about 30 seconds on each side until pliable. This prevents them from cracking when rolled.

          Assemble the Enchiladas: Spread half of the enchilada sauce in the bottom of a 9x13-inch baking dish. Take a warmed tortilla, spoon about 1/4 cup of the beef mixture down the center, and sprinkle with a little of the cheddar and Monterey Jack cheese mixture. Roll up the tortilla and place seam-side down in the baking dish. Repeat with the remaining tortillas.
