Fall Crockpot Turkey and Wild Rice Soup

1 pound ground turkey (or diced leftover turkey)

1 cup wild rice blend (rinsed and drained)

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, sliced

2 medium celery stalks, sliced

4 cups low-sodium chicken broth

1 cup water

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon sage

1 bay leaf

Salt and pepper to taste

1 cup heavy cream (optional for creaminess)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Base: In a large skillet over medium heat, brown the ground turkey (or sauté diced turkey) until it's no longer pink. This will take about 5-7 minutes. Break it into chunks as it cooks. If using leftover turkey, skip this step.

    Combine Ingredients: Transfer the browned turkey into the crockpot. Add the wild rice, diced onion, minced garlic, sliced carrots, sliced celery, chicken broth, and water.

      Seasoning: Sprinkle the dried thyme, rosemary, sage, and bay leaf into the crockpot. Season with salt and pepper to taste.

        Cook: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the wild rice is tender and the flavors meld beautifully.

          Finish the Soup: If you're adding cream for a richer flavor, stir in the heavy cream during the last 30 minutes of cooking. Remove the bay leaf before serving.

            Serve: Ladle the soup into bowls, and garnish with freshly chopped parsley. Pair it with crusty bread for a cozy meal!
