Ingredients

2 pounds boneless, skinless chicken breasts

1 medium onion, thinly sliced

3 cloves garlic, minced

1 cup apple cider

½ cup barbecue sauce (your favorite kind)

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

1 teaspoon smoked paprika

1 teaspoon ground cinnamon

½ teaspoon salt (or to taste)

½ teaspoon black pepper (or to taste)

4 brioche buns

Optional toppings: sliced apples, arugula, extra barbecue sauce, or cheddar cheese

Instructions

Prepare the Chicken: Place the boneless, skinless chicken breasts into the bottom of your crockpot.

Mix the Sauce: In a bowl, whisk together the apple cider, barbecue sauce, apple cider vinegar, Dijon mustard, Worcestershire sauce, smoked paprika, cinnamon, salt, and pepper until thoroughly combined.

Add Aromatics: Spread the thinly sliced onion and minced garlic over the chicken in the crockpot.

Pour the Sauce: Pour the apple cider mixture over the chicken and onions, ensuring that the chicken is fully submerged in the sauce.

Cook It Slow: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.

Shred the Chicken: Once the chicken is cooked, remove it from the crockpot and place it on a cutting board. Use two forks to shred the chicken into bite-sized pieces.

Combine with Sauce: Return the shredded chicken to the crockpot, mixing it with the sauce and onions to ensure it’s well coated.

Toast the Buns: While the chicken soaks up the flavors, lightly toast the brioche buns in a skillet or oven until golden brown.

Assemble the Sandwiches: Spoon a generous amount of the pulled chicken mixture onto the bottom half of each bun. Add optional toppings like sliced apples, arugula, extra barbecue sauce, or cheddar cheese for an added twist.

Serve and Enjoy: Place the top half of the bun on the assembled sandwich, serve it warm, and enjoy the comforting fall flavors!
