Fall Crockpot Chicken Sausage Pasta

1 lb chicken sausage (sweet or spicy, sliced)

1 medium onion, diced

3 cloves garlic, minced

2 cups butternut squash, cubed

1 red bell pepper, chopped

1 can (14.5 oz) diced tomatoes (with juice)

2 cups low-sodium chicken broth

1 tsp dried oregano

1 tsp dried thyme

½ tsp red pepper flakes (optional, for heat)

1 cup frozen peas

8 oz pasta (penne or rigatoni)

2 cups fresh spinach (or kale)

Salt and pepper to taste

Grated Parmesan cheese for serving

Fresh basil for garnish (optional)

Instructions
 

Prepare the Base: In the bottom of your crockpot, layer the sliced chicken sausage, followed by the diced onion, minced garlic, cubed butternut squash, and chopped red bell pepper. Stir to combine.

    Add Liquids and Seasoning: Pour in the diced tomatoes (with juice) and chicken broth. Sprinkle in the dried oregano, thyme, red pepper flakes, and season with salt and pepper. Mix everything together gently.

      Crockpot Cook: Cover the crockpot and set it to cook on low for 4-5 hours or on high for 2-3 hours until the vegetables are tender and the sausage is cooked through.

        Cook Pasta: About 20 minutes before serving, add the pasta to the crockpot. Stir the mixture and ensure the pasta is submerged in liquid. If needed, add a bit more broth or water to keep it saucy.
