2 salmon fillets (approximately 6 oz each)

1/4 cup soy sauce (low sodium recommended)

2 tablespoons honey (or maple syrup for a vegan option)

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 tablespoon fresh ginger, grated

2 cloves garlic, minced

2 cups cooked jasmine or brown rice

1 cup broccoli florets

1 cup bell peppers, sliced (any color)

1/2 cup shredded carrots

2 green onions, sliced (for garnish)

1 tablespoon sesame seeds (optional, for garnish)

Salt and pepper to taste

Marinate the Salmon: In a bowl, combine soy sauce, honey, rice vinegar, sesame oil, grated ginger, and minced garlic. Whisk until well blended. Place the salmon fillets in a shallow dish or a ziplock bag, and pour the marinade over them. Allow to marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

    Cook the Rice: Prepare the jasmine or brown rice according to package instructions. Once cooked, fluff with a fork and set aside.

      Sauté the Vegetables: In a large skillet over medium heat, add a drizzle of oil. Once hot, add the broccoli and bell peppers. Sauté the vegetables for about 4-5 minutes until they are tender-crisp. Add the shredded carrots and cook for an additional 2 minutes. Season with salt and pepper. Remove from heat and set aside.

        Cook the Salmon: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Remove the salmon from the marinade (reserve the marinade) and place the fillets on the prepared baking sheet. Bake the salmon for about 12-15 minutes, or until it flakes easily with a fork.
