Easy Shrimp Tacos with Creamy Avocado Sauce

This recipe combines tender shrimp marinated in spices with a luscious avocado dressing, perfect for weeknight dinners or gatherings. For the shrimp:

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

8 small corn or flour tortillas

Fresh cilantro, for garnish

Lime wedges, for serving

For the creamy avocado sauce:

1 ripe avocado

1/2 cup Greek yogurt (or sour cream)

1 tablespoon lime juice (freshly squeezed)

1 small garlic clove, minced

Salt and pepper to taste

A pinch of cayenne pepper (optional, for extra heat)

Instructions
 

Prepare the shrimp: In a medium bowl, combine the shrimp with olive oil, chili powder, cumin, garlic powder, paprika, salt, and pepper. Mix well to ensure all shrimp are evenly coated in the spices. Let it marinate for about 15-20 minutes.

    Make the creamy avocado sauce: While the shrimp is marinating, cut the avocado in half, remove the pit, and scoop the flesh into a blender or food processor. Add the Greek yogurt, lime juice, minced garlic, salt, pepper, and cayenne pepper (if using). Blend until smooth and creamy. Taste and adjust seasoning if necessary. Set aside.

      Cook the shrimp: Heat a non-stick skillet over medium-high heat. Once hot, add the marinated shrimp to the skillet in a single layer. Cook for about 2-3 minutes on each side, or until the shrimp turns pink and opaque. Remove from heat.

        Warm the tortillas: In the same skillet or a microwave, warm the tortillas until they are pliable and slightly charred, about 30 seconds on each side in the skillet or 20 seconds in the microwave (covered).

          Assemble the tacos: Place a few shrimp on each tortilla. Drizzle with the creamy avocado sauce and top with fresh cilantro. Serve with lime wedges on the side.
