Easy Ranch Pasta Salad

8 oz rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell pepper (any color), diced

1/2 cup red onion, finely chopped

1 cup frozen peas, thawed

1 cup shredded cheddar cheese

1 cup cooked and crumbled bacon (optional)

1/2 cup ranch dressing

1/4 cup mayonnaise

1 tbsp fresh dill, chopped (or 1 tsp dried dill)

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.

    Prepare the Veggies: While the pasta is cooking, wash and chop the cherry tomatoes, cucumber, bell pepper, and red onion into bite-sized pieces.

      Mix the Dressing: In a large mixing bowl, whisk together the ranch dressing, mayonnaise, and fresh dill. Add salt and pepper to taste.

        Combine Ingredients: In the same bowl with the dressing, add the cooled pasta, cherry tomatoes, cucumber, bell pepper, red onion, peas, shredded cheddar cheese, and bacon (if using). Toss gently to combine until all the ingredients are evenly coated with the dressing.

          Chill: Cover the pasta salad with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld together.
