Easy Peach Yogurt Popsicles

2 ripe peaches, pitted and chopped

1 cup Greek yogurt (plain or vanilla)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1/2 cup coconut milk (or milk of your choice)

1 teaspoon vanilla extract

Pinch of salt

Optional: fresh mint leaves for garnish

Prepare the Peaches: In a blender, add the chopped peaches and blend until smooth. If you prefer a chunkier texture, you can pulse a few times to keep some peach bits.

    Mix the Base: In a separate bowl, whisk together the Greek yogurt, honey (or maple syrup), coconut milk, vanilla extract, and a pinch of salt until well combined.

      Combine Mixtures: Gently fold the blended peaches into the yogurt mixture. If you want to create a swirl effect, reserve some peach puree and only mix in about half of it.

        Fill the Molds: Pour the mixture into popsicle molds, leaving a little space at the top for expansion. If using, add the reserved peach puree on top and swirl with a skewer or spoon for a fun look.

          Insert Sticks: If your molds don't come with built-in sticks, insert wooden popsicle sticks into the center of each mold.

            Freeze: Cover the molds with a lid (or plastic wrap if no lid) and freeze for at least 4-6 hours, until solid.

              Unmold and Serve: To remove the popsicles, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out. Serve immediately, garnished with fresh mint leaves if desired.
