4 boneless, skinless chicken breasts

1 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 cup chicken broth

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

3 garlic cloves, minced

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

2 tablespoons olive oil

Fresh basil leaves, for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sear the Chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat. Season the chicken breasts with salt and pepper. Add them to the skillet and sear for about 4-5 minutes on each side, until they golden brown. Remove the chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, reduce the heat to medium. Add the minced garlic and sauté until fragrant, about 30 seconds. Add the sun-dried tomatoes, stirring to combine.

        Add Cream and Broth: Pour in the heavy cream and chicken broth. Stir well, allowing the mixture to come to a gentle simmer.

          Mix in Cheese and Herbs: Add the mozzarella, Parmesan, dried basil, dried oregano, and red pepper flakes, if using. Stir until the cheese has melted and the sauce is well combined; let it simmer for another 2-3 minutes.

            Combine Chicken and Sauce: Return the seared chicken breasts to the skillet, spooning some of the sauce over the top. Make sure the chicken is well-coated.

              Bake: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F / 74°C).

                Garnish and Serve: Remove from the oven and let it rest for a few minutes before garnishing with fresh basil leaves. Serve hot over pasta or rice, drizzling extra sauce on top.
