Easy Fruit Pasta Bake

8 oz (about 225g) of short pasta (like fusilli or penne)

1 cup of fresh strawberries, hulled and sliced

1 cup of ripe bananas, sliced

1 cup of blueberries

1 cup of Greek yogurt (vanilla-flavored works best)

1/2 cup of shredded coconut

1/3 cup of honey or maple syrup

1 tsp of vanilla extract

1/2 tsp of cinnamon

1/3 cup of granola (optional for crunch)

Fresh mint leaves for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside.

      Prepare the Fruit Mixture: In a mixing bowl, gently combine the sliced strawberries, bananas, and blueberries. Set aside.

        Make the Yogurt Mixture: In another bowl, whisk together the Greek yogurt, honey (or maple syrup), vanilla extract, and cinnamon until smooth and well blended.

          Combine: In a large baking dish, add the cooked pasta and fruit mixture. Pour the yogurt mixture over the top and gently stir to coat everything evenly.

            Add Coconut and Bake: Sprinkle the shredded coconut over the pasta mixture. If using, top with granola for an added crunch. Place the dish in the preheated oven.

              Bake: Bake for 20-25 minutes or until the top is slightly golden and the mixture is heated through.

                Garnish and Serve: Remove from the oven, garnish with fresh mint leaves, and let cool for a few minutes before serving. Enjoy warm or chilled!
