1 cup jasmine rice

2 cups vegetable broth or water

1 cup dilly beans (pickled green beans)

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh or frozen)

1 avocado, diced

1 small red onion, finely chopped

1/4 cup fresh dill, chopped

1 tablespoon olive oil

1 tablespoon apple cider vinegar

Salt and pepper, to taste

Optional: Feta cheese or goat cheese for topping

Instructions
 

Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine rice and vegetable broth (or water) and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes or until the rice has absorbed the liquid. Remove from heat and let it sit (still covered) for another 10 minutes.

    Prepare the Veggies: While the rice is cooking, in a large mixing bowl, combine the chopped red onion, cherry tomatoes, corn, and fresh dill.

      Combine Dilly Beans and Veggies: Gently fold in the dilly beans into the veggie mixture. Drizzle with the olive oil and apple cider vinegar, then season with salt and pepper to taste. Mix well, ensuring all ingredients are well-coated and integrated.

        Assemble the Bowl: Fluff the cooked rice with a fork and divide it into serving bowls. Top each bowl with the dilly bean and veggie mixture. Add diced avocado on top for creaminess, and if desired, crumble feta or goat cheese over everything for an extra burst of flavor.
