2 medium cucumbers, thinly sliced

2 medium apples (preferably Granny Smith), julienned

1 cup shredded carrots

1/4 red onion, thinly sliced

1/3 cup chopped fresh parsley

1/4 cup apple cider vinegar

2 tablespoons honey (or maple syrup for a vegan option)

1 tablespoon Dijon mustard

1/4 teaspoon salt

Freshly ground black pepper, to taste

1/4 cup sunflower seeds (optional, for crunch)

Instructions
 

Start by preparing the vegetables and fruits. Thinly slice the cucumbers and red onion, and julienne the apples. You can also use a mandoline for even slices, especially for cucumbers and onions.

    In a large mixing bowl, combine the sliced cucumbers, julienned apples, shredded carrots, red onion, and chopped parsley. Toss gently to mix all the ingredients evenly.

      In a separate small bowl, whisk together the apple cider vinegar, honey (or maple syrup), Dijon mustard, salt, and black pepper until well combined.

        Drizzle the dressing over the slaw mixture and toss until the slaw is well-coated in the dressing. If you'd like extra crunch, sprinkle sunflower seeds on top and gently mix.

          Allow the slaw to sit for about 10-15 minutes before serving. This helps the flavors meld together and the apples to soften slightly.
