2 medium zucchinis

1 cup breadcrumbs (panko recommended for extra crunch)

½ cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

1 tsp Italian seasoning

½ tsp salt

¼ tsp black pepper

2 large eggs

¼ cup all-purpose flour

Cooking spray or olive oil for drizzling

Preparation: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup and to prevent sticking.

    Prep Zucchini: Rinse and dry the zucchinis. Cut them into fries, about 1/4 inch thick. To reduce moisture, place them on paper towels and sprinkle with a little salt; let them sit for about 10-15 minutes. This will help them become crunchier.

      Breading Setup: In a shallow bowl, place the all-purpose flour. In a second shallow bowl, beat the eggs. In a third bowl, combine the breadcrumbs, grated Parmesan, garlic powder, onion powder, Italian seasoning, salt, and black pepper.

        Dredging Process:

          - First, coat each zucchini fry in the flour, shaking off any excess.
