Crunchy Southwest Veggie Wraps

4 large whole wheat tortillas

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 avocado, sliced

1 cup shredded carrots

½ cup red onion, thinly sliced

1 cup chopped fresh cilantro

½ cup plain Greek yogurt or dairy-free alternative

2 tablespoons lime juice

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

1 cup tortilla chips, crushed (for crunch)

Instructions
 

Prepare the Dressing: In a small bowl, mix the Greek yogurt, lime juice, cumin, chili powder, salt, and pepper until combined. Set aside.

    Prepare the Veggies: In a large mixing bowl, combine the black beans, corn, diced red bell pepper, halved cherry tomatoes, avocado slices, shredded carrots, red onion, and chopped cilantro. Toss gently until the mixture is evenly distributed.

      Assemble the Wraps:

        - Lay a tortilla flat on a clean surface.

          - Spread a generous amount of the yogurt dressing over the tortilla, leaving about an inch around the edges.

            - Spoon a portion of the veggie mixture in the center of the tortilla.

              - Sprinkle crushed tortilla chips over the veggies for added crunch.

                Wrap it Up: Fold in the sides of the tortilla, then roll from the bottom up to enclose the filling completely. Make sure to wrap tightly but gently to avoid tearing the tortilla.

                  Repeat the assembly process with the remaining tortillas and veggie mixture.
