1 cup raw almonds

1 cup raw cashews

1 cup raw walnuts

1 cup pumpkin seeds (pepitas)

2 tablespoons olive oil

1 tablespoon maple syrup (or honey)

1 teaspoon sea salt

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon cayenne pepper (optional, for a spicy kick)

1/4 cup dried cranberries (for a touch of sweetness)

1/4 cup dark chocolate chips (optional but delicious)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line a large baking sheet with parchment paper for easy cleanup.

    Mix the Nuts: In a large mixing bowl, combine the raw almonds, cashews, walnuts, and pumpkin seeds.

      Prepare the Coating: In a small bowl, whisk together the olive oil, maple syrup, sea salt, smoked paprika, garlic powder, and cayenne pepper until well blended.

        Combine: Pour the oil mixture over the nuts and seeds. Using a spatula, toss everything together until the nuts and seeds are evenly coated.

          Spread on Baking Sheet: Transfer the mixture onto the prepared baking sheet, spreading it into an even layer. Make sure there’s space between the pieces for optimal roasting.

            Roast in the Oven: Place the baking sheet in the preheated oven. Roast for about 10-12 minutes, stirring halfway through to ensure even cooking and prevent burning. The nuts should turn golden brown and fragrant.

              Cool Down: Once roasted, remove the baking sheet from the oven. Let the nut mix cool down for about 10 minutes on the baking sheet. As it cools, it will become crunchier.
