250g halloumi cheese, sliced into 1cm thick pieces

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

1 teaspoon garlic powder

1 teaspoon dried oregano

1/2 teaspoon paprika (smoked if preferred)

Salt and pepper to taste

1/4 cup fresh parsley, finely chopped (for garnish)

Olive oil, for frying

Lemon wedges, for serving

Instructions
 

Prepare the Halloumi: Start by patting the sliced halloumi dry with paper towels to remove excess moisture. This helps achieve a better crunch when cooked.

    Set Up Breading Station: In three separate shallow dishes, place the flour seasoned with salt and pepper in the first dish. In the second dish, pour the beaten eggs. In the third dish, combine the panko breadcrumbs, garlic powder, oregano, paprika, and an additional pinch of salt and pepper.

      Bread the Halloumi: Dredge each halloumi slice first in the flour, making sure it’s fully coated. Shake off any excess flour. Next, dip the floured slice into the beaten eggs, allowing any surplus to drip off, and finally coat it in the seasoned panko breadcrumbs. Press gently to ensure the breadcrumbs stick well. Repeat this process for all slices.

        Heat the Oil: In a large skillet, heat about 1/4 inch of olive oil over medium heat. You want the oil hot enough that a breadcrumb sizzles when dropped in it.

          Fry the Halloumi: Once the oil is hot, carefully add the breaded halloumi slices in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side, until they are golden brown and crispy. Turn the slices gently with a spatula to ensure even cooking.

            Drain Excess Oil: Once cooked, transfer the crispy halloumi to a plate lined with paper towels to absorb any excess oil.
