6 large jalapeño peppers

1 cup cream cheese, softened

1/2 cup shredded cheddar cheese

1/2 cup crumbled cooked bacon (optional)

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

4 large flour tortillas

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

Prep the Jalapeños: Begin by preheating your oven to 375°F (190°C). Slice the jalapeño peppers in half lengthwise and remove the seeds and membranes (use gloves if preferred).

    Make the Filling: In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, cooked bacon, garlic powder, onion powder, salt, and pepper. Mix until smooth and well-blended.

      Fill the Jalapeños: Spoon the cheese mixture into the halved jalapeños, making sure each half is generously filled.

        Prepare the Wraps: Lay one tortilla flat on a cutting board. Place 3-4 stuffed jalapeño halves onto the center of the tortilla, then fold the sides and roll it tightly to enclose the jalapeños. Repeat this with the remaining tortillas and jalapeños.

          Bread the Wraps: Set up a dredging station with three bowls: fill one with all-purpose flour, one with beaten eggs, and the last with panko breadcrumbs. Roll each wrapped jalapeño in the flour, then dip in the egg, and finally coat with panko breadcrumbs until fully covered.

            Fry the Wraps: In a large skillet, heat about 1 inch of cooking oil over medium heat. Once the oil is hot (about 350°F or 175°C), carefully place the wraps in the skillet, frying each side for about 3-4 minutes or until golden brown and crispy.

              Drain and Serve: Remove the wraps from the skillet and place them on a paper towel-lined plate to drain excess oil. Serve warm with ranch or blue cheese dressing for dipping.
